Teriyaki London Broil with Smashed Veggies

This London broil is great served with the flavorful smashed veggies. What an easy dinner completed on the grill.
 

Ingredients

  • 3 tablespoons teriyaki marinade sauce
  • 2 tablespoons honey mustard
  • 3 tablespoons olive oil
  • 1 1/2 lbs London broil
  • 1 head cauliflower
  • 1 medium potato
  • 1 cup baby carrots
  • 3 cloves garlic
  • Salt and pepper
  • 2% milk
  • 2 tablespoons butter

Method

Whisk together teriyaki marinade sauce, honey mustard and 2 tablespoons of oil. Coat all sides of London broil with marinade mixture, put in a shallow pan and cover with plastic wrap. Refrigerate for at least 1 hour. Heat grill on high for 10 minutes, reduce temperature to medium. Clean cauliflower and remove stems. Peel and clean potato and cut into 1/2 inch cubes. Cut baby carrots in half. Clean and slice garlic. With shiny side out, put veggies on a large piece of tin foil and drizzle with 1 tablespoon of oil. Fold tin foil over veggies and fold up edges to make a pouch. Put veggie pouch on grill with London Broil at medium heat, marinate London broil on both sides until cooked to your taste. Let London broil rest for 3 minutes before slicing. Slice meat 1/4 inch thick across the grain. Roast veggies for about 5 minutes on each side. Remove pouch from grill and carefully open foil. Be careful of escaping steam. Test that veggies are soft and cooked through. When veggies are done, remove from grill. Transfer veggies to a medium mixing bowl and smash them with a potato masher. Add salt and pepper. Continue smashing until smooth, add 2% milk to reach desired consistency. Stir in butter. Serve sliced London broil over smashed veggies.
