Sweet and Spicy Sausage Skewers

Chunks of kielbasa, onion, peppers and pineapple are threaded onto skewers and marinated in a cooked mixture including soy sauce and liquid smoke.
 

Ingredients

  • 2 lbs. cooked kielbasa, cut into 1-inch chunks
  • 1 large onion, cut into 1-inch chunks
  • 2 green peppers, seeded, and cut into 1-inch chunks
  • 1 fresh pineapple, cored and cut into 1-inch chunks (you may substitute canned pineapple, but fresh is so much better)
  • Wooden skewers, soaked in water for 1/2 hour
  • 1/2 c. packed brown sugar
  • 1/2 c. ketchup
  • 4 T. cream sherry
  • 1/4 c. soy sauce
  • 1/8 t. black pepper
  • 1 t. garlic powder
  • 1/4 t. crushed red pepper, crushed between fingers
  • 1/4 t. liquid smoke

Method

Thread the kielbasa, onions, peppers, and pineapple on skewers. Mix remaining ingredients in small saucepan, and cook over medium-low heat for 15 minutes, whisking constantly; cool slightly. Pour over sausage skewers; let marinate in sauce in refrigerator at least 4 hours (make sure you flip them over halfway through, so both sides are thoroughly marinated.) Grill over medium to medium-high heat about 15 minutes, basting with sauce, or until vegetables are to desired doneness and sauce is caramelized.

 

Notes: This sauce is also great with ribs and pulled pork.
