Surprise Grilled Steak

Thick-cut boneless sirloin steaks are butterflied and marinated in Italian dressing, then filled with sliced tomato and green onion for grilling.
 

Ingredients

  • 4 8-oz. thick-sliced boneless sirloin steaks
  • 1/2 cup Italian Herb Salad Dressing
  • 1 Medium Tomato - cut into 4 slices
  • 4 Green Onions - thinly sliced (include about 1" of the green tops)

Method

Butterfly the steaks by slicing with sharp knife, cutting almost to--but not through--the other side. Brush steaks with salad dressing and place in ziplock bags; seal and refrigerate for 1 hour. Preheat grill to medium-high heat. Prepare vegetables and divide into 4 portions on a large plate. Remove steaks from refrigerator and place "opened out" on preheated grill with the "middle side" down. Cook for 8 minutes. Remove from grill and place 1 slice of tomato in the center of each steak along with 1/4 of the green onion slices. Secure with toothpicks to keep closed. Return to grill; grill about 8 minutes more, turning once to cook both sides.

 

Notes: By using the Italian dressing with its herbs, no additional seasonings are needed. The tomato and onion "surprise" inside adds just the right touch of flavor. Serve with grilled vegetables, and a fruit-and-greens salad.
