Summer Pasta Salad

A colorful blend of grilled sausage and veggies with fresh herb and cheese in a hearty pasta side.
Ingredients
- 1 box penne pasta, cooked according to package directions
- 2 pounds Italian sausage
- 2 tbsp extra virgin olive oil
- 1 red pepper
- 1 green pepper
- 1 yellow pepper
- 2 large onions
- 2 large cloves garlic, chopped
- 1 large bunch fresh basil
- 1 tbsp thyme
- 1 cup Parmesan cheese
- 1 cup feta cheese
- 1/2 cup chopped parsley
- 1 bottle Northern Italian dressing, divided

Method
Grill sausage and slice into one inch pieces. Slice all peppers and onion into thin slices and coat with olive oil, then grill until tender, about 10 minutes. Roll basil into a cigar form and chop until fine. In a large bowl, combine peppers, onion and sausage with basil, thyme, garlic and both cheeses. Add 1/2 bottle of dressing. Stir in cooked pasta and remaining dressing. Serve in a large bowl with a sprinkle of parsley on top.
Notes: If you do not grill the sausage, it can be prepared on the stove in a skillet. Also the peppers and onions can be cooked this way.
