Stuffed Pork Loin

Peppers, spinach and bread crumbs give this grilled pork roast moistness and flavor.
 

Ingredients

  • 1 pork loin about 9 inches long
  • 1 pkg frozen spinach
  • 1 yellow pepper, cut up
  • 1 green pepper, cut up
  • 1 clove fresh garlic, minced
  • 1/2 cup seasoned bread crumbs
  • 2 tablespoons olive oil

Method

Thaw spinach and rinse. Saute garlic and peppers in olive oil. Slice open pork loin and stuff inside with sauted ingredients, bread crumbs, and spinach. Wrap in tin foil and cook on grill for 20-30 mins or until inside is done.
