Spicy Thai BBQ Skewers

Marinate beef in a Thai-flavored barbecue sauce and thread on skewers with pineapple and red peppers for a flavorful meal. Serve with rice and more of the sauce.
 

Ingredients

  • 2 pounds beef sirloin steak
  • 3/4 cup packed brown sugar
  • 3/4 cup warm water
  • 1 cup crunchy peanut butter
  • 1 cup light soy sauce
  • 1/3 cooking oil
  • 3/4 cup honey barbecue sauce
  • 1 to 2 TBSP. Habanero Pepper sauce (or to taste
  • 1 1/2 tsp. granulated garlic
  • 1 fresh pineapple
  • 2 tsp. Granulated ginger
  • 2 red sweet peppers

Method

Slice the beef into long strips, across the grain. Set aside. Dissolve brown sugar into warm water, then whisk in the peanut butter. Add soy sauce, oil, barbecue, pepper sauce and garlic and blend well. Marinate the strips of beef in 3/4 of marinade mixture, reserving the remaining 1/4 for dipping sauce later. Marinate in the refrigerator at least 4 hours for the best taste. Remove from marinade; discard marinade. Peel pineapple, and cut into 1-inch cubes. Sprinkle with ginger. Cut the sweet peppers into 1-inch pieces. Alternately thread pepper pieces, pineapple, and beef onto skewers. Grill over medium-high heat about 5 minutes on each side. Serve with remaining sauce.

 

Notes: Serve with cooked Jasmine rice.
