Spicy Pork Roast Shoulder or Butt

This great piece of meat is nicely seasoned with garlic and onion powder and paprika and cumin, wrapped tightly and cooked to perfection on the grill.
 

Ingredients

  • 3-4 lb pork butt or shoulder
  • 3 tablespoons seasoning salt
  • 3 tablespoons garlic powder
  • 3 tablespoons onion powder
  • 3 tablespoons black pepper
  • 3 tablespoons paprika
  • 2 tablespoons cumin
  • 2 tablespoons cayenne pepper

Method

Combine all dry ingredients in a small bowl. Wash pork butt in cool water, but don't trim off fat as it will help season pork. Rub combined dry ingredients on pork making sure to cover entire piece of meat, top to bottom, and all sides. Wrap twice in aluminum foil. Once to seal in meat and second time to prevent any chances of burning on grill. Refrigerate over night, or at least one hour before grilling. Prepare grill, and when ready, place pork in center of grill and close lid. Make sure that you have the air vents closed to keep all the heat in. Keep lid closed while cooking. Remove pork from grill when fire has completed died out, 3-4 hours. Remove pork roast from grill and allow 30 minutes for cooling. Remove foil and slice before serving.
