Spice Rubbed Pork Chops with Peach Salsa

A spicy rub dresses up grilled pork chops and a peach and jalapeno salsa is the perfect condiment.
 

Ingredients

  • Peach Salsa:
  • 2 1/2 cups diced peaches
  • 3/4 cup finely diced red onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 tsp Serrano or jalapeno pepper, seeded and diced
  • 2 tbsp lime juice
  • 1 tbsp sugar
  • 2 tsp honey
  • 1 tbsp chopped cilantro
  • Spice Rubbed Pork Chops:
  • 2 bone in pork chops
  • 1 1/2 tbsp brown sugar
  • 1 1/2 tsp cumin
  • 1 1/2 tsp chipotle chili powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/4 tsp pepper
 
Method

Salsa: In a large nonreactive mixing bowl, combine all ingredients. Chill at least 15 minutes before serving. Pork Chops: Place all spices in a mixing bowl and combine thoroughly. Sprinkle spice mixture generously over room temerature pork chops and rub chops until fully covered. Preheat grill to medium heat, 350-400 degrees. Place pork chops on grill, cooking about 5 minutes on one side. Flip and continue cooking on opposite side about 5 more minutes for medium rare. Remove from grill and cover with foil then let rest 5-10 minutes. Serve with peach salsa.
