Smoky Striped Bass

Bass fillets are marinated in a white wine, balsamic vinegar, lemon juice, cilantro, and garlic mixture, placed on wooden planks and grilled.
 

Ingredients

  • 2 lbs. striped bass fillets, skin on
  • 4 or 5 wooden BBQ planks
  • 1/4 cup white cooking wine
  • 1/4 cup balsamic vinegar
  • 3 tbsp olive oil
  • juice of 2 lemons
  • 1/4 fresh chopped cilantro
  • 4-5 cloves minced garlic
  • sea salt and fresh ground pepper to taste

Method

Clean bass and mix all ingredients to marinate for 2 hrs in the fridge. Soak BBQ planks for at least 30 minutes, so they do not burn on the grill. Place bass on the planks, skin down, and cook with grill cover closed on medium heat for 8-10 minutes. Brush bass with left over marinade and close cover again. Check after 5 minutes. Make sure fish is not dry and planks are not burning. Fish should flake apart with a fork. If not, close cover again and check frequently.

 

Notes: Try to use the freshest ingredients possible.
