Grilled Shrimp (marinated in raspberry vinaigrette & teriyaki sauce) are served on grilled zucchini slices with a colorful mango-pepper salsa.
Mix raspberry vinaigrette, teriyaki sauce & olive oil together; pour over shrimp & zucchini. Marinate for 1/2 hour. Grill zucchini over medium heat on grill until tender about 20 minutes. When zucchini is almost cooked, put shrimp on the grill. Grill until shrimp is done. To serve put one skewer of shrimp on top of one-fourth of the grilled zucchini slices; top with Ginger Mango Salsa. Serve with rice.
