Sizzling Teriyaki Shrimp & Zucchini with Ginger Mango Salsa

Grilled Shrimp (marinated in raspberry vinaigrette & teriyaki sauce) are served on grilled zucchini slices with a colorful mango-pepper salsa.
Ingredients
- 1 cup bottled raspberry vinaigrette salad dressing
- 1/2 cup teriyaki sauce
- 2 Tbsp olive oil
- 16 large raw shrimp, cleaned & deveined (put 4 each on skewers)
- 2 medium zucchini, sliced lengthwise
- Ginger Mango Salsa:
- 1 medium mango, peeled & chopped
- 1/2 of a red bell pepper, seeded & diced
- 2 Tbsp fresh chopped parsley
- 1 jalapeno pepper, seeded & diced
- 1 tsp minced fresh ginger
- 2 Tbsp orange juice
- 1 tsp lime juice
- Salt & pepper to taste
- Mix all ingredients together; chill until needed.

Method
Mix raspberry vinaigrette, teriyaki sauce & olive oil together; pour over shrimp & zucchini. Marinate for 1/2 hour. Grill zucchini over medium heat on grill until tender about 20 minutes. When zucchini is almost cooked, put shrimp on the grill. Grill until shrimp is done. To serve put one skewer of shrimp on top of one-fourth of the grilled zucchini slices; top with Ginger Mango Salsa. Serve with rice.
Notes: This is a great dish for company, easy and impressive.
