Pork cubes are seasoned, threaded on skewers, grilled, and served with a dipping sauce of peanut butter, soy sauce, vinegar, garlic & ginger.
In a small bowl, mix sauce ingredients with whisk until well blended. In a large bowl toss remaining ingredients until pork is well-coated with seasonings. Preheat grill to medium; brush grill rack with oil. Thread pork on skewers and grill for 7-10 minutes, turning halfway through. Serve immediately with individual dishes of the peanut sauce for dipping.
Notes:
This is a quick grilled dinner that is a real treat. The peanut sauce is sweet, hot and savory. I love it on everything from steamed vegetables to cooked noodles. But my favorite use for it is as a dipping sauce for pork kabobs or grilled, spicy chicken.
