Satay Pork Kabobs with Peanut Sauce

Pork cubes are seasoned, threaded on skewers, grilled, and served with a dipping sauce of peanut butter, soy sauce, vinegar, garlic & ginger.
 

Ingredients

  • Sauce:
  • 1/4 cup creamy peanut butter
  • 1/4 cup boiling water
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 teaspoons brown sugar
  • 1 teaspoon finely minced garlic
  • 1/2 teaspoon freshly grated ginger
  • 1/4 teaspoon hot pepper sauce or Sriracha hot sauce
  • Meat:
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/2 teaspoon Chinese 5-spice powder or chili powder
  • 1 pound pork tenderloin, cut into 1-inch cubes
  • 12 wooden skewers, soaked in water about 30 minutes
 
Method

In a small bowl, mix sauce ingredients with whisk until well blended. In a large bowl toss remaining ingredients until pork is well-coated with seasonings. Preheat grill to medium; brush grill rack with oil. Thread pork on skewers and grill for 7-10 minutes, turning halfway through. Serve immediately with individual dishes of the peanut sauce for dipping.

 

Notes: This is a quick grilled dinner that is a real treat. The peanut sauce is sweet, hot and savory. I love it on everything from steamed vegetables to cooked noodles. But my favorite use for it is as a dipping sauce for pork kabobs or grilled, spicy chicken.
