
A salmon fillet and onion slices are sprinkled with beau monde seasoning and pepper, and basted with a mixture of orange marmalade and spicy barbecue sauce while grilling. Small flour tortillas are heated on the grill, brushed very lightly with mayonnaise, sprinkled with cilantro, and filled with flaked salmon, onion, cabbage, salsa fresca, orange segments and chopped avocado, and the filled taco is sprinkled with a little feta cheese.
1. Heat a gas grill to HIGH heat and oil generously. Microwave the orange marmalade in a coffee cup for a few seconds on HIGH. Stir in the barbeque sauce but do not mix completely. Set aside. Rub the salmon and the onion, separated into rings, with the oil; sprinkle with Beau monde seasoning and cracked pepper. Grill salmon for 7-8 minutes, turning and basting with the orange-BBQ sauce often. About 2 minutes before the salmon is finished cooking, grill the onions for 2-3 minutes, turning often until onions are blistered.
2. Heat the tortillas on the grill for 35-40 seconds on each side until hot and lightly blistered. Spread the mayonnaise and sprinkle cilantro over the tortillas. Chop the salmon and onion coarsely and fill each taco with the cabbage, salmon, onion, salsa fresca, orange segments and avocado. Drizzle with extra BBQ sauce and sprinkle with feta cheese. Serve with a salad, if desired.
Notes:
The flour tortillas in this recipe measure 5-6 INCHES IN DIAMETER. This recipe utilizes a couple of condiments that are readily available in the supermarkets: Quality BBQ sauce, Salsa fresca, Orange marmalade and Low-fat mayonnaise. If used correctly, they add great flavor to your dishes. Beau Monde seasoning is available in almost all seasonings nationwide. You will find it in the spice rack.
