Saffron-Grilled Shrimp


Shrimp are marinated in a mixture of butter, olive oil, chili oil, lemon juice, garlic, pepper & saffron, then skewered and grilled.



Ingredients:

  • Marinade:
  • 1/2 stick of butter (1/4 cup)
  • 1/2 cup olive oil
  • 2 Tbsp chili oil (Pele's fire is our favorite) or 1/2 tsp chipotle powder
  • 2 pinches of saffron
  • 1 tsp fresh ground pepper
  • 1 Tbsp crushed garlic
  • Juice of 1 large lemon (about 3 Tbsp)
  • 1 1/2 pounds of large/jumbo shrimp (white tiger shrimp is so delicious), peeled and de-veined

Method

Melt butter and add the rest of the ingredients. Marinate shrimp in some of this mixture in refrigerator up to 2 hours. Drain off marinade; thread shrimp onto skewers and grill until shrimp turns pink and is done. Use remaining mixture to brush shrimp as it cooks on the grill.
