Raspberry Barbecued Turkey Wings

Raspberry jam, brown sugar and spices are used in the marinade for these turkey wings, and additional spices are in the mixture that's sprinkled on.
 

Ingredients

  • 4 to 6 pounds of turkey wings
  • 1 cup raspberry jam
  • 1/4 cup dark brown sugar
  • 1 teaspoon onion powder
  • 2 cups apple cider vinegar
  • 1 teaspoon ground allspice
  • 1 teaspoon cayenne pepper
  • Rub:
  • 1 tablespoon corn oil
  • 2 teaspoons ground allspice
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 teaspoons cayenne pepper

Method

Place turkey wings in an very large plastic bag. In a small bowl combine jam, brown sugar, onion powder, vinegar, allspice and cayenne pepper; mix well. Pour mixture over turkey wings. Chill 4 hours in refrigerator, then remove wings from sauce. Preheat oven to 350 degrees, or prepare a grill on medium-high heat. Lay heavy foil in a deep baking pan. Place turkey wings in it. Add 1 cup water to wings. Combine Rub mixture in a small bowl. Sprinkle over wings. Bake, covered, for 2 hours. Uncover and bake 1 hour or until turkey wings are tender. Or grill 1 hour. Turn wings over, cover again and bake about 1 hour more. Uncover and bake 1/2 to 1 1/2 hours, or until done. If you wish, bring sauce to boiling; simmer to desired consistency and brush on wings.
