Pineapple Coconut Macadamia Nut Stuffed Pork

Perfect for a luau or backyard party--grilled pork chops stuffed with macadamia nuts, pineapple and coconut.
 

Ingredients

  • 6 pork loin chops, 1 1/2 inch thick
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup chopped macadamia nuts
  • 1/4 cup finely minced onion
  • 3 garlic cloves, finely minced
  • 3 tablespoons butter
  • 1/4 cup crushed pineapple
  • 2 tablespoons soy sauce
  • 1/4 teaspoon lemon pepper
  • 1 1/2 cups cubed dry bread, crust removed
  • 1/2 cup shredded coconut
  • 1/3-1/2 cup pineapple juice

Method

Cut a deep pocket into each pork chop. Rub outside of chops with salt and pepper, then set aside. In a medium skillet over medium high heat, saute nuts, onion and garlic in butter about 5 minutes. Add pineapple, soy sauce and lemon pepper then cook 3-5 more minutes. Add bread cubes, coconut and enough pineapple juice to moisten mixture. Stuff chops and secure edges with toothpicks. Heat grill to high and sear chops for about 4 minutes per side. Reduce heat to medium high and continue cooking 8-10 more minutes, until no longer pink inside, brushing with any leftover pineapple juice, if desired. Remove toothpicks and serve hot.
