Peach-Glazed Pork Tenderloin


Pieces of pork tenderloin and halved fresh peaches are grilled and brushed with a glaze of peach preserves and lime.



Ingredients:

  • 1 lime
  • 1/2 cup peach preserves or jam
  • 1 pork tenderloin, about one pound
  • 4 medium peaches, halved and pitted

Method

Prepare grill for cooking over medium heat. Grate 1 teaspoon zest from lime and squeeze 1 tablespoon of juice. Mix zest and juice with preserves for the glaze. Set aside. Slice pork crosswise in half, then cut each piece lengthwise in half, forming 4 pieces total. Place pork on hot grill rack. Cover and cook 5 minutes. Turn pork. Place peaches, cut side down, next to pork. Brush pork and peaches with glaze; cover and cook 3 minutes. Turn peaches over and brush pork and peaches again with glaze; grill about 3 minutes longer or until pork is just slightly pink inside.
