Orange Roughy and Shrimp Kabobs

Skewers of shrimp and orange roughy are marinated then grilled and served with cilantro-citrus white rice.
 

Ingredients

  • 3/4 lb orange roughy fillets, cubed
  • 3/4 lb large shrimp, shelled and deveined
  • 12 cherry tomatoes
  • 1 yellow bell pepper, cubed
  • 1 green bell pepper, cubed
  • 12 whole mushrooms
  • 1 red onion, cubed
  • 1 1/2 cups white rice
  • Marinade:
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cilantro
  • 1 minced garlic clove
  • 1/2 teaspoon thyme
  • Rice mixture:
  • 1 1/2 tablespoon lime juice
  • 1 1/2 tablespoon lemon juice
  • 2 teaspoons cilantro

Method

In a small mixing bowl, whisk together all marinade ingredients. Place fish in shallow dish and pour marinade over fish. Let set for 20 minutes, 10 minutes on each side. In a medium sized saucepan, cook rice according to package directions. Heat grill to medium. When rice is done, combine with lime juice, lemon juice, and cilantro then stir until blended. Cover and set aside. On skewers, alternate fish, vegetables and shrimp. Grill 8-10 minutes or until done, brushing with marinade. Evenly place rice on 6 plates, lay kabobs on rice and serve.

 

Notes: This pecipe is so easy and tastes great. 35 minutes to prepare.
