NY Onion Sauce for Hot Dogs

A tasty sauce made with sweet onions and tomato paste to top hot dogs.
 

Ingredients

  • 4-5 large sweet onions
  • 1/4 c water
  • pinch salt
  • 1-2 tbl tomato paste
  • fresh ground coarse black pepper to taste (about 1/4tsp)

Method

Slice onions, not too thin. In large saucepan, add onions and 1/4 cup water and pinch of salt. Sweat onions until fork tender, but not too soft (about 10-15 minutes). Add tomato paste. Stir until incorporated in onions. Add fresh, coarse-ground black pepper to taste (I use at least 1/4 tsp.) Stir, let cook until onions are not quite soft (2-3 minutes).

 

Notes: Authentic NY hot dog onion sauce. Just like on the stands. Remember, only use fresh ground black pepper, no cans, no red pepper. The tang comes with the pepper at the back of your tongue..... YUUUUMMMMM!!!!
