Monterey Ranch Chicken Kabobs

Chicken chunks are marinated briefly in ranch dressing, soy sauce, vinegar, honey & rosemary, then threaded onto skewers and grilled.
 

Ingredients

  • 1/4 cup olive oil
  • 1/2 cup bottled ranch dressing
  • 3 tablespoons soy sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1-2 teaspoons dried rosemary, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 6 large boneless, skinless chicken breast halves, cut into chunks for kabobs
 
Method

In a large bowl stir together first 8 ingredients. Add chicken and toss well to coat with marinade; cover and refrigerate about 15 minutes. Meanwhile heat grill to medium-high. Remove chicken from bowl and discard marinade. Thread chicken onto skewers; grill about 8-10 minutes, or until no pink remains in chicken, turning once during cooking.

 

Notes: This is my version of a dish I enjoyed at a cookout I attended while visiting friends in Southern California. I asked the hostess for the recipe, but didn't get a written version. I memorized her verbal instructions as best I could, and this is what I came up with. I love it and make it all summer.
