Mediterranean Lamb and Feta Burgers


Feta cheese, grilled onions and baby spinach top these moist and savory grilled lamb burgers.



Ingredients:

  • 2 lbs ground lamb meat
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 teaspoon oregano
  • 2 teaspoons Worcestershire sauce
  • 1 cup crumbled feta cheese
  • 2 large red onions
  • 2 cups balsamic vinegar
  • 1 cup mayonnaise
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons fresh mint, chopped
  • 1 6 oz container baby spinach leaves
  • 6 ciabatta rolls

Method

Preheat a greased grill pan over medium high heat. Place lamb, salt, pepper, oregano, Worcestershire sauce, and feta cheese into a large bowl. Grate one onion; add 1/4 cup of onion to the bowl. Mix to combine ingredients but do not overwork meat. Form into 6 patties. Heat balsamic vinegar in a medium saucepan over high heat until it comes to a boil, and then reduce heat to low. Simmer about 12 minutes or until vinegar thickens then set aside. Prepare basil mint mayonnaise. In a mini food processor, blend mayonnaise, basil, and mint then set aside. Thinly slice remaining onions and place slices on greased grill pan. Cook for 5-6 minutes until slightly softened and set aside. Place burger patties on grill pan and cook for 4 minutes on each side for medium. Remove burgers and let them rest for 5 minutes. Slice ciabatta rolls in half and toast lightly on grill pan for 2 minutes. Spread basil mint mayonnaise on top and bottom half of each ciabatta roll. Place a burger patty on each ciabatta roll bottom. Top patty with grilled onions and baby spinach leaves. Drizzle with some balsamic reduction. Add roll tops and serve.
