Lebanese Barbecued Beef Ribs

Roasted almonds and hazelnuts combine with sesame seeds, cumin and coriander to season these beef ribs. Then slow cook them on the grill and eat.
 

Ingredients

  • 2 tbsp roasted almonds, chopped
  • 2 tbsp roasted hazelnuts, chopped
  • 2 tbsp sesame seeds
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 2 tbsp brown sugar
  • 1 tsp coarsely ground pepper
  • 1 tsp coarse salt
  • 2 racks beef ribs, 5-6 pounds total
  • Rib Dip:
  • 1 cup plain yogurt
  • 1 large clove garlic, crushed
  • 1 tsp ground sumac or 1 tsp lemon zest
  • 1 tbsp snipped thyme
  • 1 green onion, minced
  • 1/4 cup small dice peeled cucumber

Method

Finely grind the nuts and seeds then combine with the brown sugar, pepper and salt. Rub the spice mixture on the ribs. Set up the grill for indirect grilling and cook the ribs over medium heat covered for 1 1/2- 2 hours or till tender. Cut the racks into individual servings and serve with the rib dip. For the dip, combine all ingredients untill well mixed.
