Lamb and Chickpea Burgers


Ground lamb is combined with mashed garbanzo beans, onions, and seasonings (cilantro, coriander, mint and cumin), then shaped into burgers and grilled.



Ingredients:

  • 1 1/2 pound top-grade ground lamb
  • 1 can of garbanzo beans, mashed (in a food processor)
  • 1 medium red onion, chopped
  • 4 spring onions, chopped
  • 1 egg white
  • 2 medium sized thai chili peppers
  • 1 medium roma tomato, chopped
  • 2 Tbsp olive oil
  • 2 Tbsp cilantro chopped
  • 1 Tbsp mint leaves chopped
  • 1 tsp minced garlic
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1 tsp salt (to taste)
  • Hamburger buns and your favorite condiments

Method

Take the roma tomato and fry it in the olive oil until the oil separates from the tomato (over medium heat). In a large glass bowl, put the coriander powder, cumin powder, salt and egg white; whisk until incorporated. Then add the cilantro, mint and tomato; mix together. Now add the mashed garbanzo beans, lamb, red and spring onions; mix by hand. Make 6 patties and refrigerate for 6 hours. Grill on medium heat to your preference and serve with buns, lettuce and anything else you like!

Notes: The burgers are best at meduim-doneness.
