Lamb Shish Kababs

Lamb cubes are marinated in a mixture of tomato paste, honey and wine, seasoned with garlic, rosemary and oregano. The meat is then grilled on skewers with desired vegetables.
 

Ingredients

  • 1 can (6-ounces) tomato paste
  • 1/2 cup olive oil (or salad oil)
  • 1 cup honey
  • 1 cup dry white wine
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced or crushed
  • 1 1/2 pounds lean, boneless lamb cubes
  • Vegetables (as desired)

Method

Combine tomato paste, oil, honey, wine, rosemary, oregano, salt, and garlic. Pour over lamb cubes and marinate in refrigerator at least one hour. Skewer lamb cubes with vegetables such as sweet peppers, cherry tomatoes, and onion. Grill for 20-35 minutes, turning often, until lamb is done.

 

Notes: Turn often to prevent burning.
