Jamaican Jerk Shrimp

Perfectly marinated shrimp and red peppers are grilled with pineapple for a great summer flavor. Serve these kabobs with rice or couscous.
 

Ingredients

  • 1/2 cup chopped green onions
  • 2 tablespoons lime juice
  • 2 teaspoons soy sauce
  • 1 teaspoon salt
  • 1 1/2 tsp garlic powder
  • 1 tsp dried thyme
  • 3/4 tsp apple pie spice
  • 1/2 tsp ground red pepper
  • 1 1/4 pounds medium shrimp
  • 1 red bell pepper, cut into 18 pieces
  • 1 can pineapple chunks, drained
  • Cooking spray

Method

Prepare grill. Combine green onions, lime juice, and soy sauce in a food processor or blender and process until smooth. Add salt, garlic powder, thyme, apple pie spice and red pepper. Pulse a few times until mixed. Place onion mixture, shrimp and bell pepper pieces in a large zip-top plastic bag and seal. Marinate in refrigerator 20 minutes. Remove shrimp and bell pepper pieces from bag and discard marinade. Place shrimp, bell pepper pieces, and pineapple pieces in a large bowl and toss well to coat. Thread about 8 shrimp, 3 red pepper pieces and 3 pineapple chunks alternately onto each of 6 skewers. Lightly coat kebabs with cooking spray. Place kebabs on grill rack coated with cooking spray. Cook about 3 minutes on each side or until shrimp are opaque. Garnish with green onion pieces and serve with lime wedges, if desired
