Irie Jerk Chicken

Jerk chicken is traditionally quite spicy, but the level of heat can be modified by decreasing the amount of seasoning.
 

Ingredients

  • 8-10 leg quarters
  • 2 tablespoons plus 2 teaspoons jerk seasoning
  • 4 cloves garlic, finely chopped
  • 2 tablespoons seasoning salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 tablespoon soy sauce
  • 3 stalks scallions, finely chopped
  • 1/2 cup beer
  • 3 tablespoons barbeque sauce

Method

Rub chicken with 2 tablespoons jerk seasoning, add chopped garlic, seasoning salt, black pepper, thyme, soy sauce and scallions. Place chicken in a resealable bag and marinate in refrigerator overnight, turning occasionally. Remove chicken from bag and discard marinade. Prepare grill to medium high heat. Combine 2 teaspoons jerk seasoning, beer and barbeque sauce. Place chicken on a grill rack coated with cooking spray. Grill 20 minutes or until done, turning and basting frequently with beer mixture.

 

Notes: I use Walkerswood Jerk Seasoning.
