Honey Rum Grilled Pineapple Peaches and Nect

Many folks have never enjoyed grilled fruit before. Soaking the pineapple in honey, rum and butter really makes for a sweet and crispy coating.
 

Ingredients

  • 1 fresh pineapple, peeled, cored and cut into 1 inch rings
  • 2 medium peaches, peeled and cut into 1 inch thick slices
  • 2 medium nectarines, cut into 1 inch thick slices
  • 3 tablespoons honey
  • 1/3 cup melted butter
  • 2 tablespoons rum
  • Pound cake
  • Frozen yogurt

Method

Place pineapple in a large resealable plastic bag. Add honey, butter and rum. Seal bag and shake to coat evenly. Marinate for 30 minutes. Preheat a gas grill for medium high heat and lightly oil grate. Cut pineapple slices in half and thread on 8 skewers alternating with chunks of peach and nectarine. Grill pineapple 4-6 minutes, turning halfway through, or until caramelized and heated through. Serve warm with pound cake and frozen yogurt.
