Grilled Salmon with Zesty Yogurt Sauce


Salmon is an excellent source of omega-3 fatty acids. These acids help reduce the risk of heart attack, stroke, and cancer as well as lower blood pressure.



Ingredients:

  • 1 1 1/2-pound salmon fillet, 1 inch thick
  • 4 cloves garlic, minced
  • 2 tbsp. lemon juice
  • 2 tbsp. lemon zest
  • 1 tsp. snipped fresh dill
  • 1 tsp. paprika
  • Black pepper to taste
  • 1/2 cup plain, nonfat yogurt
  • 1/2 cup mayonnaise
  • 2 tbsp. drained capers
  • 1/2 tsp. dried oregano, crushed
  • 1/2 tsp. ground cumin
  • 1/2 tsp. snipped fresh dill
  • 1/4 tsp. cayenne pepper
  • Fresh lime juice to taste
  • Hot cooked rice or couscous

Method

Gently wash salmon fillet; dry with paper towels. Season fillet with garlic, lemon juice, lemon zest, dill, paprika, and pepper. Wrap in foil and grill until flaky. Meanwhile, for sauce, combine yogurt, mayonnaise, capers, oregano, cumin, dill, cayenne pepper, and lime juice. Drizzle yogurt sauce over salmon. Serve on a bed of rice or couscous.

Notes: The yogurt sauce is excellent with any grilled fish or shrimp. Try serving with couscous!
