
Salmon steaks are brushed with an oil, pepper and thyme mixture, grilled and topped with dried cranberries that have been soaked in orange juice and peel.
In a small bowl, combine cranberries, orange juice, zest and vinegar. Allow cranberries to soak while preheating grill.
In a small bowl, combine oil, salt, pepper and thyme. Brush salmon steaks with oil mixture.
Grill steaks on preheated grill 4 to 5 minutes on first side. Turn. Top each steak with 2-3 tablespoons of the cranberries. Grill an additional 3 to 4 minutes or until salmon is done.
Notes:
To insure that the salmon does not stick, preheat grill and lightly oil.
Farm-raised salmon can be substituted for wild.
I love to serve this atop a salad of micro greens dressed simply with a vinegrette that has a touch of orange juice and balsamic vinegar.
