Grilled Fish Sandwich


Mahi-mahi fillets are sprinkled with Cajun seasoning, grilled, and served in buns with a mixture of mayonnaise, roasted garlic and shredded cabbage.



Ingredients:

  • 4 fillets of mahi-mahi
  • 1 Tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup mayonnaise
  • 1 Tbsp roasted garlic
  • 2 tsp lemon juice
  • 1 cup shredded cabbage
  • 4 burger buns, split

Method

Brush mahi-mahi with oil and sprinkle with Cajun seasoning. Heat a grill pan or BBQ grill on medium heat; grill fish 4-5 minutes on each side, or until cooked through. Mix mayonnaise, salt, pepper, roasted garlic, lemon juice and cabbage. Toast buns, top each with fish and 1/4 of cabbage mixture.
