Grilled Salmon Steaks with Cran-Orange Salsa

Salmon steaks are brushed with an oil, pepper and thyme mixture, grilled and topped with dried cranberries that have been soaked in orange juice and peel.
Ingredients
- 1/2 cup dried cranberries
- 1/4 cup freshly squeezed orange juice
- 1/2 teaspoon grated orange zest
- 1 teaspoon balsamic vinegar
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon fresh black pepper
- 1 teaspoon minced fresh thyme
- 4, 4-oz. wild (or farm-raised) salmon steaks

In a small bowl, combine cranberries, orange juice, zest and vinegar. Allow cranberries to soak while preheating grill. In a small bowl, combine oil, salt, pepper and thyme. Brush salmon steaks with oil mixture. Grill steaks on preheated grill 4 to 5 minutes on first side. Turn. Top each steak with 2-3 tablespoons of the cranberries. Grill an additional 3 to 4 minutes or until salmon is done.
Notes: To insure that the salmon does not stick, preheat grill and lightly oil. Farm-raised salmon can be substituted for wild. I love to serve this atop a salad of micro greens dressed simply with a vinegrette that has a touch of orange juice and balsamic vinegar.
