Grilled Chicken Bundles with Sun Dried Tomatoes Provolone and Kalamata Olives

Skinless boneless chicken breasts, pounded and stuffed with basil, provolone cheese, dried tomatoes and kalamata olives, rolled up and grilled.
 

Ingredients

  • 4 large boneless skinless chicken breasts, pounded to 1/4-inch thickness
  • 3/4 teaspoon sea salt
  • 3/4 teaspoon fresh cracked black pepper
  • 1/4 cup fresh basil leaves
  • 8 sun dried tomatoes packed in oil, chopped
  • 4 slices provolone cheese
  • 1/2 cup pitted chopped kalamata olives
  • 3 tablespoons olive oil

Method

Preheat grill to medium-high. Place chicken on work surface, boned side up. Season with salt & pepper. Top with basil, tomatoes, provolone, and olives. Fold sides in. Roll up jelly roll style. Secure with wooden toothpicks (soaked in water for 30 minutes, if desired.) Grill 3-4 minutes on each of four sides.
