Grilled Chicken Bundles with Carmelized Onion Ham and Gruyere

Chicken breasts are pounded and stuffed with ham, gruyere, and caramelized onions with thyme.
Ingredients
- 1 medium sweet onion, diced
- 2 tablespoons butter
- 2 tablespooons fresh thyme, chopped
- 4 large boneless skinless chicken breast, pounded to 1/4-inch thickness
- 3/4 teaspoon sea salt
- 3/4 teaspoon freshly cracked black pepper
- 1/2 cup shredded gruyere cheese
- 4 thin slices ham
- 3 tablespoons butter, melted

Method
Preheat grill to medium-high. In small skillet over medium-low heat, cook onions and thyme in butter until golden and caramelized, about 7-10 minutes. Place chicken on work surface, boned side up. Season with salt and pepper. Spoon caramelized onions over chicken. Top with cheese and ham. Fold sides in; roll up jelly roll style. Secure with wooden toothpicks (soaked in water for 30 minutes first, if desired.) Brush with butter. Grill 3-4 minutes on all four sides.
Notes: Sweet onions, nutty gruyere, ham, and chicken...what's not to love about this? This is my grandson's favorite way to eat chicken...and he's only 16 months old!
