Grilled Chicken Bundles with Baby Swiss Ham and Cherries

Skinless, boneless chicken breasts are pounded and filled with Swiss cheese, ham, and cherry pie filling, then grilled.
 

Ingredients

  • 4 large boneless, skinless chicken breasts, pounded to 1/4 inch thickness
  • 3/4 teaspoon salt
  • 3/4 teaspoon freshly cracked black pepper
  • 1/2 cup shredded baby Swiss cheese
  • 1/2 cup cherry pie filling
  • 4 thin slices ham
  • 3 tablespoons melted butter

Method

Preheat grill to medium-high. Lay chicken out on work surface, boned side up. Season with salt and pepper. Sprinkle with cheese. Spoon cherry pie filling on top. Top with ham. Fold in sides, roll up jelly roll style. Secure with wooden toothpicks (that have been soaked for 30 minutes in water, if desired.) Brush with butter. Grill 3-4 minutes on each of four sides.

 

Notes: The flavor combination of these ingredients are like a match made in heaven.
