Grilled Chicken and Veggie Pasta

Grilled chicken breasts, served with a mix of grilled sauteed vegetables over spaghetti or fettuccine.
 

Ingredients

  • 1 lb chicken breasts
  • 1 large zucchini, sliced
  • 1 yellow squash, sliced
  • 1 small pkg mixed vegetables
  • 1 clove garlic, minced
  • 8 oz pasta, fettuccine or spaghetti
  • 1 small onion, finely chopped
  • 1 10 oz can mild rotel tomatoes, drained
  • 1 14.5 oz can diced petite tomatoes
  • 5-6 oz fat free Italian dressing
  • 1 tbsp olive or canola oil
  • Grill seasoning
  • Salt and pepper to taste
  • Parmesan cheese

Method

Season chicken and squash with salt, pepper and grill seasoning. Grill chicken breasts and squash. Meanwhile, bring a pot of water to a boil and prepare pasta according to package directions. Once chicken is completely cooked, remove from grill and chop into chunky pieces. Remove and set aside grilled squash and drained pasta. Steam or cook mixed vegetables according to package directions. Heat a pan with oil on medium high heat. Add onion and garlic then saute until soft and brown. Lower temperature to medium low. Add rotel tomatoes, diced tomatoes, chopped grilled chicken, steamed mixed vegetables, and 1/2 cup Italian dressing to onion and garlic mixture. Heat for approximately 5 minutes. Pour mixture over pasta. Top with grilled squash, Parmesan cheese and 2-4 tbsp of Italian dressing. May be served hot or cold.
