Chicken (or pork chops) marinated in rice wine & grated ginger, are grilled and basted with a BBQ sauce of honey, rice wine, ginger, tomato paste, & lime.
In a bowl or ziptop bag combine meat, garlic, 1/4 cup of the grated ginger, 3/4 cup of the rice wine and the orange juice; marinate in refrigerator overnight.
Make BBQ sauce by combining the remaining rice wine and grated ginger with the rest of the sauce ingredients; chill overnight in covered bowl, if making ahead.
Lift meat from marinade. Grill meat, turning occasionally, until nearly cooked, then baste BBQ sauce generously on both sides and cook about 5 minutes more per side.
Notes:
If desired, substitute 6 boneless pork chops, 1/2- to 3/4-inches thick.
