Ginger Chicken BBQ


Chicken (or pork chops) marinated in rice wine & grated ginger, are grilled and basted with a BBQ sauce of honey, rice wine, ginger, tomato paste, & lime.



Ingredients:

  • 6 skinless, boneless chicken breast halves
  • 1 tsp chopped garlic
  • 1/2 cup grated fresh ginger
  • 1 cup rice wine
  • 1/4 cup orange juice
  • BBQ Sauce:
  • 1 cup honey
  • 1/2 cup toasted sesame seeds
  • 1 cup tomato paste
  • 1 tbsp lime juice
  • 1/4 cup packed (dark) brown sugar
  • 1/8 tsp ground cloves
  • Salt and pepper to taste

Method

In a bowl or ziptop bag combine meat, garlic, 1/4 cup of the grated ginger, 3/4 cup of the rice wine and the orange juice; marinate in refrigerator overnight. Make BBQ sauce by combining the remaining rice wine and grated ginger with the rest of the sauce ingredients; chill overnight in covered bowl, if making ahead. Lift meat from marinade. Grill meat, turning occasionally, until nearly cooked, then baste BBQ sauce generously on both sides and cook about 5 minutes more per side.

Notes: If desired, substitute 6 boneless pork chops, 1/2- to 3/4-inches thick. This is lovely & tasty, and adds a little "kick" to your day.
