Garlic Grilled Zucchini


When grilled, the garlic and balsamic vinegar add a wonderful and rich flavor to the zucchini.



Ingredients:

  • 4 zucchini  
  • 8 cloves carmelized garlic  
  • 4 tbs balsamic vinegar  
  • 6 tbs olive oil  
  • sugar (optional, to taste)  
  • black pepper to taste

Method

Preheat grill. Using a hand-held blender, thoroughly blend garlic, vinegar and 4 tbs of olive oil to form a thick dressing. Add a touch of sugar and black pepper, to taste. Remove ends from zucchini. Quarter zucchini by slicing each in half, lengthwise, and then slicing each half lengthwise. Brush skin side of each piece with olive oil and brush fleshy side lightly with dressing. Grill, turning occasionally, until cooked. Place 4 slices on each plate and brush on remaining dressing. Serve immediately.
