Grilled bratwurst stuffed with pickled peppers and pepper jack cheese, wrapped in bacon and served on a bun with ketchup and mustard sauce.
Preheat grill or prepare coals to medium heat. Cut bratwursts lengthwise but not completely through. Spoon peppers into cut area, and cover with a piece of cheese, tucking it in firmly. Wrap brats with a slice of bacon. If desired, secure with a toothpick that has been soaked in water. Mix together ketchup and mustard. Brush brats with this mixture. Place on grill and cook until brats are cooked through and bacon is crisped. Time varies by thickness of bratwursts, 20-25 minutes. Brush occasionally with ketchup mixture.
Place cooked brat on bun, and remove toothpick, if applicable. Top with onion, mustard and ketchup. Serve hot.
Notes:
These can also be cooked in the oven at 350 degrees for about 20 minutes. Turn occasionally.
