Finger Lickin' Zippin' Chicken


Boneless chicken breasts are marinated in chili sauce, red wine vinegar, horseradish and garlic, and then grilled.



Ingredients:

  • 4 boneless chicken breasts, 6 oz each
  • 1 1/2 cups chili sauce
  • 3/4 cup red wine vinegar
  • 1 1/2 tablespoons prepared horseradish
  • 2 teaspoons roasted minced garlic, from jar
  • 1 teaspoon salt

Method

Mix chili sauce, vinegar, horseradish, garlic and salt in a bowl. Transfer 1/2 of marinade to a gallon size zip top bag. Place 1/2 remaining marinade into a small sauce pan. What remains in bowl will be used as a baste for chicken while it is cooking. Add chicken to marinade in ziptop bag and seal. Turn and shake bag to coat chicken. Place marinating bag in refrigerator for at least 20-30 minutes, however overnight works even better. Preheat grill. Remove chicken from marinade and place chicken on grill. Discard remaining used marinade in bag. Grill chicken, turning and basting frequently with half the reserved marinade, until juices run clear when meat is pierced with a knife. This should take about 30 minutes. Heat reserved marinade in sauce pan, stirring occasionally. Serve this sauce hot alongside chicken.

Notes: This also works amazingly well with pork chops or pork loin, I call that one "Pucker-Up Picante Pork", and my dormies used to beg me to make this for them before I moved out and into my own place.
