Chicken with Strawberry Tequila Salsa

Grilled, marinated chicken breasts are served with a fruit mixture of mango, grapes, melon and jalapenos, drizzled with blended strawberries & tequila.
Ingredients
- Marinade:
- 1/2 cup fresh lime juice
- 2 garlic cloves, minced
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon salt
- Ground pepper, to taste
- 1/2 cup extra-virgin olive oil
- 4 tablespoons (1/4 cup) chopped fresh cilantro
- 6 skinless and boneless chicken breast halves

- Tequila Strawberry and Salsa:
- 2 cups quartered strawberries
- 1/4 cup tequila
- 1 mango, peeled and diced
- 1 cup seedless grapes, halved
- 2 green onion tops, thinly sliced
- 2 small jalapeno pepper, seeded and minced
- 1 cup cantaloupe, diced
- 1 cup honeydew melon, diced
- 1/4 cup fresh lime juice

Method
For marinade: Whisk together lime juice, garlic, red pepper flakes, salt and pepper. Add oil in a slow stream, whisking well. Whisk in cilantro. Place chicken in a shallow baking dish. Pour marinade over, turn once to coat chicken. Set aside for 15 minutes, turning once. Tequila Strawberry Salsa: Place strawberries and tequila in a blender and puree; set aside. In a medium mixing bowl, combine mango, grapes, green onion tops, jalapeno peppers, cantaloupe, honeydew melon and lime juice. Gently toss; set aside. Chicken: Heat grill to medium-high. Brush grill lightly with olive oil. Remove chicken from dish. Grill 8-10 minutes on each side, or until done. Remove from grill. Place chicken on 6 plates; spoon salsa on and around chicken. Drizzle tequila-strawberry mixture over chicken and salsa.
Notes: Easy and simple, it takes me under 30 minutes to prepare. Serve with crusty bread.
