Cancun Chicken

A mix of Mexican seasonings gives chicken thighs just the right amount of spice--grill or bake for a tender treat.
Ingredients
- 5 lbs chicken thighs
- 2 tbsp Achiote paste
- 3 tsp chicken flavor bouillon granules
- 1/4 tsp Abobo all purpose seasoning
- 6 packets Sazon Goya seasoning
- 1 cup water

Method
De-bone chicken and remove skin, (optional). Place chicken in a large glass or stainless steel bowl. Add all other ingredients in a blender and mix well. Pour over chicken and mix well. Marinate at least 2 hours. During marinating process make sure you stir and mix chicken so it is coated evenly. Before grilling rub cooking oil on the grill to prevent sticking.
Notes: You can also use 5 lbs. bone-in chicken thighs. To cook in the oven place chicken in a baking pan, skin side up, uncovered at 350 degrees for 45 minutes to an hour or until cooked thoroughly.
