California Hot Sauce Cheese Burger with Carro

These burgers are made with black Angus beef, carrot, hot sauce, Parmesan cheese and kalamata olives and then grilled. Top with avocado and feta for perfection.
 

Ingredients

  • Bread:
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon chopped Italian parsley
  • Burger:
  • 1 1/2 lbs black Angus ground beef
  • 1 carrot, peeled and finely grated
  • 3 teaspoons Tabasco hot sauce
  • 1 teaspoon minced garlic
  • 1/4 cup pitted kalamata olives, drained and chopped
  • 1 teaspoon chopped oregano
  • 1 teaspoon chopped basil
  • 1/2 cup finely grated aged pecorino or Parmigiano Reggiano
  • 1 egg slightly beaten
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper
  • Sandwich:
  • 3 cups salad greens
  • 1 avocado, peeled, pitted and sliced thinly
  • 2 medium tomatoes, thinly sliced
  • 4 sweet banana wax peppers, drained and chopped
  • 1 cup crumbled feta cheese
  • Kosher salt and freshly ground black pepper to taste
  • 4 kaiser buns split
 
Method

In a small bowl, whisk together oil and parsley then set aside. Wipe grill with olive oil, not mixed with parsley, and heat to medium. In a large mixing bowl, combine all burger ingredients and blend well. Shape into 4 round patties. Grill burgers over medium heat for 5-10 minutes, or until meat is no longer pink, turning once. When burgers are almost done, place kaiser buns, flat side down, on grill until golden brown. Set buns on 4 plates and brush olive oil and parsley mixture evenly on flat sides of buns. Layer sandwich as follows: lettuce, avocado, beef patty, tomatoes, banana peppers, cheese, kosher salt and ground pepper to taste. Close sandwich and serve. If cooking inside, preheat broiler and place burgers on wire rack over foil lined baking sheet or broiler pan. Broil 6 inches from heat source for 4-5 minutes per side for medium done.
