Cajun Grilled Prawn Skewers


Jumbo prawns are coated with blackening spices, wrapped in prosciutto, rubbed with garlic oil, and grilled.



Ingredients:

  • Wooden skewers    12, 6-inch
  • FOR THE REMOULADE:
  • Low-fat mayonnaise   4 tbsp.
  • Whole grain mustard  1 tsp.
  • Olive oil             1 tbsp.
  • Low-fat sour cream   2 tsp.
  • Cajun seasonings    1 tsp.
  • Dill pickle, minced   2 tsp.
  • Basil, minced     2 tsp.
  • Bottled horseradish    1 tsp.
  • FOR THE PRAWNS:
  • Jumbo prawns, cleaned  12
  • Blackening spices       2 tbsp.
  • Prosciutto           12 slices
  • Garlic oil    3 tbsp.
  • Hickory-flavored BBQ sauce  1/4 cup

Method

1. Soak the skewers in ice water for 30 minutes. Combine the next 8 ingredients in a small bowl and mix well. Cover with plastic wrap and refrigerate. Season the prawns with the blackening spices, then wrap the prosciutto around each prawn tightly. Thread one prawn on each skewer, then rub with the garlic oil. 2. Heat a gas grill to HIGH heat and oil generously. Cook the prawns for 1-2 minutes on each side, basting constantly with the hickory BBQ sauce until prawns are firm and pink in the center. Serve prawns on a large platter with the basil remoulade on the side.

Notes: 1. In this recipe, you should trim the prosciutto just so that it wraps around the prawns very snuggly. 2. For this recipe, I use Paul Prudholme's Magic Cajun and blackening seasonings. I think it's a great product. I have also seen in almost every grocery. 3. The garlic oil in this recipe I also see in many super markets including Safeway, Vons, Trader Joes, Whole foods market. It is very good quality, and is a great condiment to keep stored in your cutboard. Olive oil can be substituted in place of the garlic oil.
