Cubes of steak marinated with bourbon, then grilled and served with grilled peaches, goat cheese and a balsamic vinegar glaze.

  • Servings: 12

½ cup Bourbon
½ cup Brown Sugar
4 Garlic Cloves, minced
1 Tbsp Worcestershire Sauce
1 lb Steak, cubed
3 Peaches
1 cup Balsamic Vinegar
¼ cup Sugar
1 tsp Salt
8 oz Goat Cheese

Combine the bourbon, sugar, garlic, and Worcestershire sauce. Place the cubed steak into the bourbon mixture and marinate at least 30 minutes. Meanwhile, cut the peaches into slices and place in balsamic vinegar for 15 minutes. Grill the steak cubes and peaches over medium heat, each for about 4-5 minutes per side. In a cast iron skillet on the grill, combine balsamic vinegar from peaches, sugar and salt. Let the mixture come to a boil, then simmer for about 15 minutes, until mixture has reduced by half. Cut the goat cheese into small squares to fit on top of the steak. To assemble, place each steak cube on a toothpick, top with a goat cheese square, and then a peach. Drizzle with balsamic vinegar reduction and serve warm.

Helpful Tips:

I love putting appetizers on toothpicks--it makes everyone grab them fast, plus the toothpicks just get thrown out. No serving dishes to clean up after the game.
