Boneless BBQ Pork Ribs

Pork loin is coated with a dry rub and oven-roasted until tender. It's then carved and grilled, brushing with a sweet bar-be-cue sauce.
 

Ingredients

  • Dry Rub:
  • 3 Tablespoons paprika
  • 1 Tablespoon garlic powder
  • 1 Tablespoon brown sugar
  • 3 Tablespoons coarse salt
  • 2 Tablespoons pepper
  • 6 to 7 lbs of boneless pork loin
  • BBQ Sauce:
  • 1 bottle (36 oz) ketchup
  • 1 cup brown sugar
  • 3/4 cup (honey) BBQ sauce
  • 1/2 teaspoon lemon juice

Method

In a small bowl combine the paprika, garlic powder, brown sugar, salt and pepper. Rub this mixture on all sides of pork loin. Place on rack in a roasting pan with about one inch of water in the bottom. Bake, uncovered, at 300 degrees. Remove from oven when internal temperature is 160 degrees. Let roast set 10 minutes. While roast is baking, prepare BBQ sauce: In a saucepan over low heat combine ketchup, brown sugar, bbq sauce and lemon juice. Simmer about 10 minutes; remove from the heat. After meat has rested, place on cutting board and slice into 1 1/2-inch slices. Lay each one down and cut in half again vertically. Preheat grill or ridged grill pan on medium heat. Place meat on grill and brush with BBQ sauce. Turn meat frequently and brush with sauce each time. Grill about 20 minutes total.

 

Notes: The meat can be prepared even a day ahead of time. Just needs warmed on the grill, brushing with the bbq sauce prior to serving.
