Bleu Cheese Stuffed Burger

Ground beef patties seasoned with garlic, bleu cheese and basil and topped with lemon-lime mayonnaise.
Ingredients
- 4 lbs 85% to 90% lean ground beef
- Olive oil
- 1 large red pepper, small dice
- 1 cup diced red onion
- 4 whole garlic, unpeeled
- 12 large leaves fresh basil, roughly chopped
- 2 eggs
- 12 oz bleu cheese
- Salt and pepper to taste
- Sauce:
- 2 cups mayonnaise
- 1 tbsp juice from fresh lime
- 2 tsp juice from fresh lemon
- 1 tsp chili powder

Preheat grill to 350 degrees. Mix sauce ingredients together and chill until ready to serve. Brush red pepper with olive oil and place on grill. Lightly coat a piece of foil with olive oil and place unpeeled garlic cloves in foil bringing corners together and twisting at top to create a tent and place on grill. After about 1-2 minutes roll pepper to evenly cook pepper on all sides, continue doing so until pepper is tender and has a slightly charred skin. For garlic give the tent a shake to move cloves around a bit after about 7 minutes; let roast on grill for a total of about 15 minutes. After pepper and garlic are done remove from grill and set aside to cool. Place ground beef in a large mixing bowl adding red onion, basil. Take pepper and cut open cleaning out seeds and pith so only tender flesh of pepper is left. Add to mixture. Peel garlic cloves and finely chop, add to mix with eggs. Mix all ingredients together and form into 1/4 lb patties. Place 1 tbsp bleu cheese on half of patties then take remaining patties and place on top. Press edges together and season to taste on both sides. Place burgers on grill and cook for 4 minutes on each side or until cooked to your liking.
Notes: Serve burger on Kaiser roll that has been buttered and toasted, garnished with shredded lettuce and sliced tomatoes. Place burger on top and add lemon lime infused mayonnaise.
