Bleu Cheese Deluxe Burger

Caramelized onions and bleu cheese make ordinary burgers a special occasion--and no one will guess how simple they are to prepare.
 

Ingredients

  • Caramelized Onions:
  • 1 tablespoon extra virgin olive oil
  • 1 large Spanish onion, thinly sliced
  • 1 tablespoon light brown sugar
  • Bleu Cheese:
  • 1 1/2 cups bleu cheese, crumbled
  • 4 tablespoons butter, softened
  • 2 tablespoons chopped fresh Italian parsley
  • 1 teaspoon crushed rosemary
  • 1/4 cup finely chopped toasted walnuts
  • Burgers:
  • 2 1/2 pounds ground chuck, 80%-85% lean
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 6 hamburger buns split and toasted
  • 2 cups baby arugula or baby spinach leaves

Method

Heat oil in a large nonstick skillet over medium heat until hot. Add onions, cook 5-7 minutes or until tender, stirring occasionally. Reduce heat to medium low, sprinkle in brown sugar, and continue cooking 10 minutes or until very tender and golden brown, stirring often. Remove from heat and cover with lid to keep warm. Meanwhile prepare cheese mixture. In a medium mixing bowl, combine first four ingredients and stir until well blended. Add chopped walnuts, stir until incorporated, then cover and set aside. Wipe grill with vegetable oil and heat to medium high heat. Shape beef into 6 round firm patties and season each burger, on both sides, with 1/4 teaspoon salt and 1/4 teaspoon pepper. Grill burgers 10-15 minutes or to desired doneness, turning once. When burgers are almost done, set buns flat side down, on grill until golden brown. Remove burgers from grill, cover with foil, and let rest 5 minutes. Assemble burger as follows: caramelized onions, burger patties, cheese mixture and salad greens. Close sandwich with bun top and serve.
