BBQ Pulled Pork

A large pork roast is baked until very tender, pulled apart, drizzled with a mixture of vinegar, honey, sugars & seasonings, and heated on the grill.
 

Ingredients

  • one 5 to 6 pound pork roast (such as rump or picnic)
  • 2 tbsp Liquid Smoke
  • For Sauce:
  • 1 cup vinegar
  • 1 tsp salt (or to taste)
  • 1/2 cup granulated (white) sugar
  • 1/2 cup packed brown sugar
  • 1 tbsp ground mustard (or to taste)
  • 1/4 cup Worcestershire sauce
  • 2 tbsp crushed garlic
  • 1 small onion, chopped fine
  • 1/2 cup ketchup
  • 1/4 cup honey

Method

Place roast in a baking pan lined with a large piece of heavy aluminum foil. Sprinkle Liquid Smoke evenly over roast. Fold and seal foil. Bake several hours in a 200 degree oven, or until very tender. Remove roast from oven; cool slightly and pull meat apart, discarding any bone and fat. In a saucepan, combine all sauce ingredients; heat and stir until sugars are dissolved. Place a piece of heavy foil on the grate of a grill. Evenly distribute the pulled pork on the foil; drizzle prepared sauce over pork. Cover grill and let the mixture cook for approximately 30 minutes, rearranging meat every 5 to 10 minutes.

 

Notes: Serve the pulled pork mixture in hamburger buns, if you wish.
