BBQ Meat Rub

This meat rub combines a variety of spices and herbs (such as paprika, mustard, basil, coriander, savory, and thyme) with the sweetness of brown sugar and warmth of pepper to produce a flavorful rub for grilled meats.
 

Ingredients

  • 2 1/2 tbsp. brown sugar
  • 2 tbsp. paprika
  • 2 tsp. dry mustard
  • 2 tsp. onion powder
  • 2 tsp. garlic powder
  • 1 1/2 tsp. dried sweet basil
  • 1 tsp. ground bay leaves
  • 3/4 tsp. ground coriander
  • 3/4 tsp. ground savory
  • 3/4 tsp. dried thyme
  • 3/4 tsp. freshly ground black pepper 3/4 tsp. white pepper
  • 1/8 tsp. ground cumin
  • salt to taste

Method

Mix all together and store in an airtight container. It keeps for 4 months on the shelf in the cupboard. To use: rub the meat thoroughly on both sides and wrap in plastic wrap. It is best done hours ahead of time or overnight. You can also do it while the charcoal is getting ready. It doesn't have as deep a flavor, but it will work.
